Not juice from a bottle. Not something that looked premium but felt industrial. Real oranges, squeezed in front of the guest.

The other was a display with artisan ice creams available during breakfast. A simple idea, but different enough to make you stop, look, choose, and probably mention it to someone.

These are not revolutionary innovations. They are not expensive digital platforms or complex operational projects. But they do something very important: they add perceived value to the guest experience.

And in hospitality, perceived value is directly connected to revenue.

Small Details Create Price Confidence

One of the biggest challenges hotels face today is not only how to increase rates, but how to make guests feel comfortable paying those rates.

A guest will accept a higher price when the experience supports it. The room matters, of course. The location matters. The brand matters. But the final perception of value is built through dozens of small moments across the stay.

Breakfast is one of those moments.

It is a high-impact touchpoint because almost every guest experiences it. It happens early in the day, it influences mood, and it is easy to compare with other hotels. A poor breakfast can damage the perception of the whole stay. A memorable breakfast can do the opposite.

Fresh orange juice and artisan ice cream are simple examples of how a hotel can create small “value signals”. They tell the guest that someone has thought about quality, choice, and enjoyment.

That has commercial value.

From Operational Detail to Revenue Asset

The mistake many hotels make is treating these details only as operational decisions.

F&B you decide what goes on the buffet. Revenue decides the price. Marketing decides what to communicate. Operations executes the service. But the guest does not see departments. The guest sees one experience.

When these details are connected properly, they become part of the revenue strategy.

A better breakfast can support a premium room package. It can improve direct booking conversion when shown properly on the website. It can help justify a higher breakfast supplement. It can improve online reviews. It can create social media content. It can help the hotel differentiate from competitors by offering the same standard buffet.

This is where ancillary revenue becomes interesting.

Ancillary revenue is not about charging guests for everything. That approach can quickly become annoying and damage trust. Good ancillary revenue starts with value. The guest should feel that the extra product, service, or experience is worth paying for.

In some cases, the monetization is direct: a premium breakfast, a brunch experience, a local product tasting, a breakfast upgrade, or a package including selected F&B elements.

In other cases, the monetization is indirect: higher satisfaction, better reviews, stronger brand perception, more direct bookings, and more loyalty.

Both matter.

The Numbers Still Matter

Of course, not every nice idea is automatically a good business decision. Fresh juice, artisan products, local suppliers, premium coffee, or special breakfast displays need to be measured.

Hotels should ask practical questions. What is the cost per guest? Does it increase breakfast uptake? Does it help sell packages? Does it appear in guest reviews? Does it improve satisfaction scores? Can it support a higher ADR? Is it operationally consistent during peak periods?

This is the balance that matters: creativity with control.

A detail only becomes a real revenue asset when it improves the guest experience and makes sense financially. Otherwise, it is just decoration with a cost attached.

But when the detail is well designed, well communicated, and well measured, the impact can be much bigger than it looks.

Value Before Monetization

What I liked about the example at Amàre Sancti Petri is that it didn't feel forced. It felt natural. It belonged to the breakfast experience and made it better.

That is the key.

The best revenue opportunities do not always come from creating something new. Sometimes they come from looking at the existing guest journey and asking: where can we add more value?

Not more complexity. More value.

A stronger breakfast. A better arrival moment. A more attractive spa offer. A smarter room upgrade. To local product corner. A small surprise that feels relevant to the hotel's positioning.

These details help protect price. They reduce dependence on discounts. They make packages easier to sell. They make guests more willing to recommend the hotel. And they give marketing something real to communicate.

In the end, revenue is not only created when the guest pays more.

Revenue is also created when the guest feels the price was worth it.

The Opportunity for Hotels

Many hotels already have more revenue potential than they think. The opportunity is not always hidden in a new system, a new channel, or a new campaign.

Sometimes it is hidden in the breakfast room.

In the spa menu.

In the lobby.

In the way the hotel presents local products.

In the small details that make the experience feel more personal, more premium, or simply more memorable.

The important thing is to connect those details to the business model.

At Torres Hospitality Consulting, we help hotels identify these opportunities and turn guest experience, ancillary revenue, and profitability into a clear, practical strategy.

Because the best hospitality details are not only nice.

They also make business sense.

TORRES HOSPITALITY CONSULTING

A few weeks ago, during breakfast at Amàre Sancti Petri, I noticed two small details that stayed with me.
